Healthy Steak & Cheese




Cheese....mmmm cheese! Okay let me confess that I love cheese...oh and bread! So what's better than to have yummy steak covered in melted cheese surrounded by soft bread....oh and veggies? NOTHING! 

Unfortunately the steak & cheese you get at a restaurant can be very pricey in the way of calories and fat. Well not this version! As you may or may not know, I am doing Weight Watchers so I had to find a way to cut some calories and fat out but still make it delicious and PointPlus+ friendly.

This meal makes four 8" subs!

Oh and here's the good part .... you can feed 4 people for UNDER $10!!

Ingredients
8" Sub Roll
1 lb. Minute Steak - tear into strips
1 White Onion
1/2 a Green Pepper
2 Cups Shredded Low Fat Mozzarella Cheese
2 tbs Olive Oil
Low Fat Mayo (optional)
Aluminum Foil

***Steak Marinade***
(optional)

3 tbs Worcestershire Sauce
2 tbs Balsamic Vinegar
2 Garlic Cloves
Salt/Pepper to taste

How To Cook

***Marinade***
This is optional but it gives the steak a nice little kick!
Place steak in a large ziplock bag and add the Worcestershire sauce and Balsamic vinager. Then mince up garlic and add. Close bag and make sure all the steak is covered. Place in the fridge for minimum 1 hour and up to over night.

1. Dice up green pepper into small pieces and cut onion into long strips

2. On medium heat add olive oil to the sauté pan along with onions and peppers. Cook until tender (approx. 10 minutes)

3. Cut open the sub roll and scoop out all the interior bread. This will not only eliminate some calories but it will also give you plenty of room to add all the yumminess without the bread ripping. 

4. Once onions and peppers are cooked - place them in a bowl. Turn heat up to high and add steak. It will cook in about a minute (hence the name).

5. Preheat oven to 350.

6. Spread mayo on to roll (if wanted) and add enough cheese to lightly cover the bottom of the roll.

7. After steak is cooked add the veggies in the sub roll followed by the steak and topped with another layer of cheese

8. Cover the steak & cheese with the foil and put in oven. Let it cook for about 5-8 minutes or until the cheese is melted.

Voila! 
Yummy steak and cheese!

Hey everyone! This is Tiffany this week. People! Your posts were seriously SO GOOD this past week. I had SUCH a hard time choosing this week's feature. I feel that this post needed to be shared.

Codi is a beautiful blogger who loves books, pups, coffee, and helping others. I have fallen in love with her blog. She needs to be discovered by everyone! Her blog is called the Art of Balance and is her place of finding calm amidst anxiety. I love that because I seach for that daily myself! 

This post gave me chills. I loved the raw honesty and vulnerability that Codi shared with her readers regarding her thoughts on her body, weight loss, and the ups and downs that she is experiencing. I think every woman can relate to Codi. We always compare ourselves to when we were in the "best shape in our lives". This heartfelt post examines where she has been, where she is, and where she is going. This post is written so lovely. I have been there. I know so many woman who are in her shoes now. Thank God for people who are able to share their wounds for the benefits of others. I forwarded this post to several of my friends who I know would relate and find her post so relatable and encouraging. Thank you Codi for writing a post that so many women are thinking but terrified to share with others.

ALOHA FRIDAY



Wow I can't believe how awful I have been about posting lately! I have had a lot that has happened in the past week. Some I will share, and some I will not just because it's not my story to share.

Baby Boy Turned 9 Months!
Where oh where has the time gone? I felt like it was just last week that I was counting down to his due date. Now 9 months has gone by and he will be a year old in 3 short months?! So here is a little about him .... 
He loves to cruise the furniture with only one hand. Loves to pull himself up on my legs then stand without holding on. Says Daddaa like it's going out of style. Can say momma but immediately say's Daddaa after and smiles. The Kitty Kahhhttt is still his favorite and he is now pointing to the things that he wants. It's so sweet to have him wave hello and goodbye but will only say "Hi" to the cats. He will make the fishy lips if I do it to him first. He loves us unconditionally. 





Anniversary!
On Tuesday my husband and I celebrated our 2 year wedding anniversary! And not only was it our 2 year anniversary, it was also our 7 year anniversary of being together. I, the smart gal I am, set our wedding date on the same day we started dating. I made it easy on my husband...he only had to remember ONE anniversary since they land on the same day!
We didn't do anything too extravagant like last year (went to Mexico) because we have a baby boy who we don't want to be away from and we weren't able to travel this year for many different reasons. 
So we went out and shopped for baby boy then went to our favorite restaurant. It was delicious and wonderful to just sit and talk about our wedding and honeymoon. 







Baby Boy's 9 Month Check-Up
It went really well! No shots this time so it was all chit chat and finding out how much he has grown. I must first say that we absolutely love our Pediatrician! She is loving, caring, and just a down to earth doctor who takes as much time with you as you need.
So here it is...
Height: 29.5" (90%)
Weight: 19lbs 11oz (30%)
18.5" noggin' (big brain!)
And has met and surpassed all his milestones early.
When we told her what he was doing she said that she wasn't going to be talking about those milestones until his one year appointment. He is highly advanced which is great!
So he is perfect!

Weight Watchers Success
As I had said in an earlier post, I am finally taking control. I joined Weight Watchers January 2nd and have lost weight each week at weigh in! I have found a group of wonderfully supporting women that I look forward seeing each week at our meetings. I am feeling so good about myself and have stopped caring what others think about me joining. The momentum has started...now here is to keeping it going!

TIme Behind The Camera
 Since having my baby boy I haven't had much time behind my camera excet when I am taking pictures of him. So I bought some $4.99 flowers at the grocery store and snapped some pictures. You can check most of them out HERE but here are a few I took this week.








So as I said before I have been a little busy with my family and certain unforeseen tragic circumstances that have happened this past week. So thank you for bearing with me.

"STOP Defining Yourself"

 I had the pleasure of picking last week's winner, which is exciting since it was my first week of being a Host! If you haven't guessed yet, yes this is Chelsee from Southern Beauty GuideThere were so many inspirational and educational post this week that made this a difficult decision. As I was reading posts I came across this great blog- Everything Happens for a Reason! Whitney is a Southern Belle with a love of fashion, makeup, and hair. She blogs all about her life and also writes posts from Beauty related to  the "Raw, Real, & Honest" ones. She's a Military wife, but is not just a pretty face. She has two bachelor's degrees (Psychology and Communication) and a master's degree (Mental Health Counseling). 

I really loved this post about not defining yourself. This is something that I truly feel that many go through. When I saw Whitney posted on this it truly stood out. She talked avidly about not letting a something like "a job" define you, and introduces that "a job" is just one facet of yourself. Due to the judgmental and overly defining world that I believe we live in, I feel that it is important to take time to recognize that we are far more than what we often define ourselves as being.

Snowy Sunday Snaps

Since I live in Maine it is no wonder that I am sitting here and it's snowing outside. And since we have over 3 feet of snow outside, since December, I have started to run out of things to do!

On one of my weekly shopping trips yesterday I saw some Gerber Daisy's on sale for $4.99. Now who doesn't love a touch of pink in the middle of winter? I know I sure do. So I cut them, stuffed them in a water filled vase, and called it a day.

Then as I was wandering around with my baby boy in the Boba I saw how close my camera was sitting next to those pretty pink flowers. Ah-ha! Why don't I snap a few pictures. So I took out my extension tubes so I could get some really good macro shots.

So here are just a few shots. Seriously, anything pink can turn a dreary Maine snow day into something bright and wonderful!

This week I stumbled across this great blog- Such a Mama! Ann blogs all about her life and the many projects she does with her children. She has some awesome crafts on her blog! 

I really loved this post about melting crayons into shapes using ice cube trays. My toddlers chubby little fingers love different shapes and textures, so I thought this was a brilliant idea! Ann and her son in preschool made these together and she was able to teach him how to bake and talk about the process of melting. I love crafts and projects that are teachable moments for children too, teaching them a combination of math, reading, or science!
