The Non-Cook is Cooking!



So, let me start by saying, I hate to cook. My mother is an amazing cook. Growing up we always had gourmet meals every night. In fact, we never had the typical "American" dinners of hotdogs and mac & cheese, chicken nuggets, ect. We had fish, we had stirfry, we had steak with some sort of vegetable something-something. So the fact that I don't like to cook astounds me. But the sheer thought of cooking sends chills down my spine and sends me running to our stack of take-out menus.

Now this blog is about keeping things simple. Ordering take-out would be very simple, but it's also about saving money, in which case ordering out is not the way to go. So I make the select few meals I know how.

Tonight my husband worked late so I had to think of something, and this is what I came up with, an all time comfort food:

Stuffed Shells

Now I did not have a recipe (and I hate following them...they intimidate me...so I winged it!)

26 Jumbo pasta shells (24 will fit in an 9x13 but I make 2 extra since they tend to rip while boiling)
1 1/2 Cups Cottage Cheese
1 1/2 Skim Ricotta Cheese
1 tbsp Italian seasoning
2 tsp Garlic salt
1 Jar pasta sauce of your liking (or you can make your own from 'Kitchen Ready' tomatoes, garlic, onions EVOO - I just didn't have time)
1 cup mozzarella shredded cheese


     Cook the pasta about 30 minutes before you want to fill them to give them time to cool down. I actually like when they are cold since they hold their form better. Then mix the cheeses and the seasonings in a bowl and set aside.
     Take your 9x13 pan and coat the bottom with a healthy amount of pasta sauce.
     Fill each shell with the cheese mixture and set in pan:
     Cover shells (once they are all filled) with sauce. Make sure they are completely covered or the uncovered parts will get a bit tough. Not a big deal unless you're picky, in which case just cover them.

     Cover everything with mozzerella cheese:
     Cook about 30-35 minutes at 350 degrees. Let it sit for about 8 minutes.
     Enjoy!


     You can play with the cheese ratio a little. I prefer a 2:1 mixture of ricotta to cottage cheese, but that is just a personal preference.

    1. Emily it is sooo easy and sooo yummy! I like how you can just eat a few shells at a time. It makes it easier than say lasagna! I HATE cooking, but this I do love to make since it's so easy :):)
